A medley of fresh vegetables, seasoned ground beef, and a blend of authentic taco spices are cooked to perfection in a pressure cooker to create a rich and comforting soup. Top with a medley of shredded cheese, sour cream, and fresh cilantro and this soup is perfect for any taco lover.
Ingredients

1 lbs Ground beef
- 1 Onion

1 Garlic clove
- 2 tbsp Olive oil
- 1 pack Taco seasoning mix

1.5 cups Chicken broth

1 can Rotel (Diced tomato and Green chiles)
- 0.5 cup Black beans
- 0.5 cup Corns

Salt and pepper, to taste

From the main menu, select ‘Manual Cook’ and then choose ‘Sear/Satue’. Set the heat level to level 3.
Heat the olive oil, then add the ground beef and cook until browned, breaking it up into smaller pieces as it cooks.
Add the diced onion and minced garlic to the pressure cooker and saute for an additional 3-4 minutes until the onion is translucent.
Stir in the taco seasoning mix, making sure to coat all of the ground beef and vegetables.
Add the chicken broth, Ro-Tel, black beans, and corn to the pressure cooker and stir to combine.
Season with salt and pepper to taste.
From the main menu, select 'Auto Cook' and select 'Taco Soup' from the recipe presets. Press 'Ok' to start.
Once cook time has finished, ensure that the float valve has fully descended, then turn the pressure release valve to 'VENT'. Confirm that all steam has released from the valve before opening the lid.
Carefully remove the lid and stir the soup to ensure everything is well mixed.
