- 1 Cucumber

- 1 tbsp Vinegar
- 1 cup Water
- 6 tbsp Mayonnaise
- 1 tbsp Salt

To get started, you'll need:

Wash and peel the potatoes and carrots. Cut the potatoes into small cubes and slice the carrots into thin slices.
Dice the cucumber and onion.
From the main menu, select 'Auto Cook' and select 'Potato Salad' from the recipe presets. Press 'Ok' to start.
Add 1 cup of water to the inner pot of the pressure cooker, then place the steam rack inside. Place potatoes and carrots on the steam rack.
Securely attach lid and set the pressure release valve to 'VENT' Press 'Ok' to start.
Once cook time has finished, Confirm that all steam has released from the valve before opening the lid.
Allow for the steamed veggies to cool.
In a large mixing bowl, combine the cooled vegetables, diced ham, diced cucumber, and diced onion.
In a separate small mixing bowl, whisk together the mayonnaise, vinegar, salt, and black pepper.
Pour the dressing over the vegetables and mix until everything is well coated.
Serve the potato salad chilled or at room temperature. Enjoy!
