1 can Jackfruit
- 1 Onion

2 Garlic cloves
- 2 tsp Vegetable oil

4-6 Taco shells of your choice (hard shell or soft shell)
- 1 Avocado
- 1 stalk Cilantro
- 1 Lime
- 4-5 tbsp Vegetable broth
- 2 tsp Agave syrup

1 tsp Chili powder
- 1 tsp Cumin powder
- 1 tsp Paprika powder

To get started, you'll need:

Drain and rinse the jackfruit. Cut into small pieces.
From the main menu, select ‘Manual Cook’ and then choose ‘Sear/Satue’. Set the heat level to level 3.
Heat the vegetable oil over medium heat. Add the onion and garlic and cook until they are soft and fragrant, about 5 minutes.
Add the jackfruit, vegetable broth, agave syrup, chilli powder, cumin, paprika, and a pinch of salt and pepper to the pressure cooker. Stir to coat the jackfruit with the spices.
From the main menu, select 'Auto Cook' and select 'Jackfruit Tacos' from the recipe presets. Press 'Ok' to start.
Securely attach lid and set the pressure release valve to 'SEAL' Press 'Ok' to start.
Once cook time has finished, ensure that the float valve has fully descended, then turn the pressure release valve to 'VENT'. Confirm that all steam has released from the valve before opening the lid.
The jackfruit should be tender and easily shreddable. Use two forks to shred the jackfruit into small pieces.
Heat the taco shells according to the package instructions.
To assemble the tacos, fill each taco shell with a spoonful of the shredded jackfruit, a spoonful of mashed avocado, and a sprinkle of chopped cilantro. Squeeze some lime juice over the top of each taco.
Serve the tacos immediately, with any desired additional toppings such as salsa, cheese, or sour cream. Enjoy!
