1 lbs Corned beef brisket
- 1 Bell pepper
- 1 Chili pepper
- 1 Onion
- 1 Carrot

Begin by prepping all of your vegetables. Dice the bell pepper, chili pepper, onion, and carrot, and slice the cabbage into bite-sized pieces. Peel and dice the potatoes, and mince the garlic.
Place the corned beef brisket in the pressure cooker. Add the vegetables, including the bell pepper, chili pepper, onion, carrot, cabbage, and potatoes.
Pour the beef broth over the vegetables and beef. Add the Cajun seasoning, salt, and pepper.
From the main menu, select 'Auto Cook' and select 'Corned Beef' from the recipe presets. Press 'Ok' to start.
Securely attach lid and set the pressure release valve to 'SEAL' Press 'Ok' to start.
Once cook time has finished, ensure that the float valve has fully decended, then turn the pressure release valve to 'VENT'. Confim that all steam has released from the valve before opening the lid.
Serve the corned beef and vegetables hot, garnished with fresh herbs if desired.
Recipe Note
If you prefer a thicker broth, you can whisk together a mixture of 1 tablespoon cornstarch and 2 tablespoons water and stir it into the broth before serving. This will help to thicken the broth and give it a rich, creamy consistency.
